Preheat oven to 350°F (175°C). Lightly grease 2–4 oven-safe ramekins.
Whisk cottage cheese, eggs, vanilla, and honey/maple (if using) until smooth.
Stir in almond flour (or oats), cinnamon, baking powder, and salt. Fold in chopped apple.
Divide mixture evenly among ramekins. Bake 25–30 minutes until set and lightly golden on top.
Cool slightly and serve warm or at room temperature.
