Crockpot Chicken Enchilada Casserole
  1. Add chicken to the Crockpot and pour in enchilada sauce and Rotel

  2. Add taco seasoning, garlic powder, onion powder, salt, and pepper

  3. Cover and cook on LOW for 4-6 hours or HIGH for 2-3 hours, until chicken is tender

  4. Shred the chicken directly in the Crockpot

  5. Stir in the tortilla strips and 1 cup of the cheese

  6. Cover and cook another 20-30 minutes on HIGH, until the tortillas soften and everything thickens

  7. Top with the remaining cheese, cover again, and let it melt

  8. Garnish with cilantro, green onions, olives, or jalapeños
