Add chicken to the Crockpot and pour in enchilada sauce and Rotel
Add taco seasoning, garlic powder, onion powder, salt, and pepper
Cover and cook on LOW for 4-6 hours or HIGH for 2-3 hours, until chicken is tender
Shred the chicken directly in the Crockpot
Stir in the tortilla strips and 1 cup of the cheese
Cover and cook another 20-30 minutes on HIGH, until the tortillas soften and everything thickens
Top with the remaining cheese, cover again, and let it melt
Garnish with cilantro, green onions, olives, or jalapeños
