Chop the spinach roughly and set aside
Crack 7 large eggs and season with salt, pepper, cayenne, and chives
Whisk the eggs for 2 minutes and set aside
In a pot, melt the butter, add the flour and cook for 1 minute
Add the warm milk and mix until it comes to a boil and thickens
In a small bowl, combine 1 tbsp of bechamel with 1-2 tbsp of egg mixture and whisk together
Add the egg mixture mixture back to the bechamel and mix in
Add the remaining egg mixture, spinach, and cheese to the bechamel and whisk until creamy and smooth
Grease a 9 inch baking dish well with oil or butter
Pour the egg mixture into the prepared dish
Top with additional cheese and bacon slices
Sprinkle with black pepper
Bake at 385°F for 30-35 minutes until golden and puffed
Serve warm and enjoy
