  1. Chop the spinach roughly and set aside

  2. Crack 7 large eggs and season with salt, pepper, cayenne, and chives

  3. Whisk the eggs for 2 minutes and set aside

  4. In a pot, melt the butter, add the flour and cook for 1 minute

  5. Add the warm milk and mix until it comes to a boil and thickens

  6. In a small bowl, combine 1 tbsp of bechamel with 1-2 tbsp of egg mixture and whisk together

  7. Add the egg mixture mixture back to the bechamel and mix in

  8. Add the remaining egg mixture, spinach, and cheese to the bechamel and whisk until creamy and smooth

  9. Grease a 9 inch baking dish well with oil or butter

  10. Pour the egg mixture into the prepared dish

  11. Top with additional cheese and bacon slices

  12. Sprinkle with black pepper

  13. Bake at 385°F for 30-35 minutes until golden and puffed

  14. Serve warm and enjoy
