Air Fryer Pork Chicharron/cracklings
  1. Cut the pork into pieces small enough to fit in your air fryer basket

  2. Make a foil boat/pouch for each piece, protecting the meat but leaving the skin exposed

  3. Place a thick coating of salt on the skin, covering it completely

  4. Air fry for 30 minutes at 375°F

  5. Remove the pork from the air fryer and discard salt crust, brushing away any excess

  6. Remove and discard the foil

  7. Let it rest for 10 minutes to get rid of some steam and slice into hedgehogs

  8. Ensure the skin does not sit in any moisture

  9. Return the strips to the air fryer, skin side up

  10. Cook for 20 minutes at 390°F

  11. Give them one final blast at 400°F for 5-10 minutes

  12. Season generously with the chili lime seasoning and enjoy
