Smothered Okra and Tomatoes
  1. In large pot melt butter on medium high heat and sauté onions for 15 minutes to soften and just begin to brown.

  2. Add okra, and stir occasionally, sautéing the onions and okra mixture for another 15 minutes.

  3. While the mixture is cooking, mix all seasonings (except the Creole mustard) in a ramekin or cup.

  4. Add tomatoes and gradually sprinkle in dry seasonings, stirring to break up tomato pieces.

  5. When well mixed and tomatoes begin to throw off juices, add Creole mustard and stir.

  6. Cover and cook for 30 more minutes over low heat stirring occasionally.
