Cinnamon Roll Banana Cake
  1. For the Cinnamon swirl: Mix together the light brown sugar and cinnamon. Melt the unsalted butter.

  2. For the Cake: In a large bowl, whisk together the plain flour, caster sugar, and baking powder. In a separate bowl, combine the whole milk, vanilla, lightly beaten eggs, and melted unsalted butter. Mash the ripe bananas.

  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

  4. Grease an 8x10" tin and preheat the oven to 180°C (160°C fan).

  5. Pour half the cake batter into the tin, then sprinkle over the cinnamon sugar mixture. Top with the remaining cake batter.

  6. Bake for 40-45 minutes, until the top is golden and a toothpick inserted comes out with a few moist crumbs.

  7. For the Glaze: Whisk together the icing sugar and milk until smooth.
