For the strawberry sauce: Place all the ingredients for the strawberry sauce in a bowl and mix with a fork, mashing some of the strawberries to create a thick sauce.
For the cream cheese and clotted cream layer: Place the cream cheese, vanilla and clotted cream in a bowl and stir to combine.
Sieve over the icing sugar and stir again.
To assemble: Place a tablespoon of the strawberry sauce in the bottom of each glass or glass bowl.
Add a layer of crumbled shortbread.
Top with a layer of the cream layer.
Repeat until to the top, finishing with a cream layer.
Top with a few slices of strawberry, and a small crumble of shortbread.
