Mexican Street Corn Chicken Bowls
  1. Preheat oven to 400°F.

  2. Season chicken breasts with salt, pepper, chili powder and garlic powder.

  3. Bake chicken for 20-25 minutes until cooked through.

  4. In a bowl, mix together the corn, cotija cheese, mayonnaise and lime juice.

  5. Slice or shred the cooked chicken and add it to the corn mixture.

  6. Serve immediately.
