Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper. If using frozen cherries, thaw and chop roughly.
In a food processor or blender, combine cottage cheese, cherries, honey (or maple syrup), almond butter, vanilla, cinnamon, and salt. Pulse until mostly smooth with some cherry chunks.
Transfer the mixture to a bowl and stir in rolled oats until fully combined and sticky.
Spread evenly into the prepared pan, pressing down firmly. Bake for 25-28 minutes until edges are golden. Cool completely in the pan before cutting into 12 bars.
