Cottage Cheese Cherry Oat Bars
  1. Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper. If using frozen cherries, thaw and chop roughly.

  2. In a food processor or blender, combine cottage cheese, cherries, honey (or maple syrup), almond butter, vanilla, cinnamon, and salt. Pulse until mostly smooth with some cherry chunks.

  3. Transfer the mixture to a bowl and stir in rolled oats until fully combined and sticky.

  4. Spread evenly into the prepared pan, pressing down firmly. Bake for 25-28 minutes until edges are golden. Cool completely in the pan before cutting into 12 bars.
