Clean the green beans and potatoes
Snap the green beans in half and chop the potatoes into quarters
Heat a skillet and add the andouille sausages or turkey sausage with Cajun seasonings, then set aside
In the same skillet, add onion, garlic, and flour with various seasonings
Add vegetable stock and water to the skillet
Add the green beans and simmer for a bit
Add the red potatoes and more of the same seasonings
Cover and simmer for 30 to 45 minutes until vegetables are soft
Add the cooked sausages back into the skillet
Mix everything together well and serve
