Chilli Oil Wontons (紅油抄手) forming sealing technique
  1. Mix the ground pork, chopped scallions, grated ginger, soy sauce, sesame oil, and white pepper in a bowl until well combined.

  2. Place a wonton wrapper on a clean surface in a diamond shape.

  3. Scoop about 1 tablespoon of the pork filling into the center of the wrapper.

  4. Wet the edges of the wrapper with water, then fold the wrapper in half to form a triangle, pressing the edges to seal.

  5. Bring the two corners of the triangle together and pinch to seal, creating a little purse shape.

  6. Bring a large pot of water to a boil. Carefully add the wontons and cook for 5-7 minutes until they float to the top.

  7. Remove the wontons with a slotted spoon and transfer to a serving bowl.

  8. Drizzle the hot wontons with chili oil and serve immediately.
