Cut the spring onions into small pieces with a knife.
Melt the butter in a large pot over medium heat and add the spring onions.
Once the spring onions have sweated enough, add the frozen peas and sweat them a little.
Deglaze the vegetables with the vegetable broth and add the mint, baking soda, and spices (salt, pepper, nutmeg).
Let everything simmer for 5-10 minutes.
Blend or puree the mixture with a hand blender to the desired consistency, adjusting with additional vegetable broth as needed.
Fill the soup into bowls and garnish with the optional toppings.
