  1. Heat a large fry pan with a medium heat and add in the olive oil

  2. In the meantime, crack 2 eggs into a shallow bowl, finely grate in 3 cloves of garlic, add in the parsley and season with sea salt & black pepper, whisk together until well mixed

  3. Coat the slices of sandwich bread in the egg mixture and add into the pan with the hot olive oil (cook in batches of 2), fry for 2 minutes per side or until golden fried all around, then transfer into a dish with paper towels

  4. Using the same pan with the same heat, crack in the other 2 eggs, fry for 2 minutes or until the egg whites are set and the yolks are creamy, then remove from the pan, season with sea salt & black pepper

  5. To assemble the sandwich, add a slice of cheese over one of the garlic breads, then add a couple thin slices of tomato and finally 1 fried egg, top off with the other garlic bread, serve at once, enjoy!
