Prepare cream cheese filling by mixing together softened cream cheese, sugar, sour cream, vanilla and food coloring. Then place tablespoonfuls onto parchment paper and chill in the freezer for an hour or until solid.
Prepare cookie dough In a bowl mix together Butter and sugars. Then add in eggs, vanilla mix until combined then add in baking soda and salt then gradually add in the flour and fold into dough with a spatula until just combined. Then add in food coloring and vinegar. Mix until color is fully mixed in.
Separate dough into about 3.5-4oz balls and make a crater with your thumb then stuff with frozen cheesecake filling. Repeat until no cookie dough is left and then chill for about 30 mins.
Preheat oven to 350 degrees Fahrenheit and bake cookies for about 14 minutes. Remove from oven and let cool on tray for about 12 minutes before moving to a wire rack to cool completely then melt some white chocolate and add food coloring then drizzle/splatter on to cookies let chocolate set then enjoy!
