Preheat oven to 400°F (205°C) and grease a muffin tin
In a bowl, mix mashed potatoes, cheese, eggs, sour cream, melted butter, chives, garlic powder, salt, and pepper
Spoon mixture into muffin cups, filling to the top
Add a little extra cheese on top for a crispy, gooey finish
Bake 20–25 minutes until golden and lightly crisp
Let cool 5 minutes, then serve warm
