One Pot, One Portion | Peanut Noodle Salad
  1. Put your rice noodles in a bowl and cover with boiling water

  2. Leave for 3-5 minutes until soft then drain in a sieve

  3. Rinse the noodles with cold water to stop them sticking together then keep in the sieve

  4. Add all the ingredients for the dressing to the bowl and give it a good whisk

  5. Add your rice noodles back in then add all of the other ingredients for the salad, apart from the avocado

  6. Give everything a good toss together until well mixed

  7. Serve up with a few extra peanuts and your avocado
