  1. Proofed one hour at room temperature for the first hour, than in fridge for seven hours.

  2. After the first proofing time I formed the balls and put back to the fridge for 12 hours.

  3. Final proofing for 5 hours at room temperature.

  4. Baked at 280 °C on the ground and 200 °C on the top.
