Unagi Style Eggplant With Furikake Rice
  1. Mix together all ingredients for the sauce, then set aside.

  2. Steam the eggplant for 5 minutes until tender, then slice in half and score the flesh in a crisscross pattern.

  3. Heat oil in a pan and fry the eggplant cut side down until golden on both sides.

  4. Pour over the sauce and let it bubble away until thick, sticky and caramelised.

  5. For the rice, mix rice wine vinegar, kewpie and furikake through warm cooked sushi rice until glossy and well combined.

  6. Serve the sticky eggplant over the furikake rice and finish with spring onion and sesame seeds.
