Sweet Potato Pineapple Upside Down Donut Rings
  1. Preheat oven to 350°F (175°C) and lightly grease donut pan.

  2. In a large bowl, whisk mashed sweet potatoes, pineapple, brown sugar, and granulated sugar until smooth. Add oil, eggs, and vanilla extract and whisk until creamy.

  3. In another bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

  4. Fold dry ingredients into wet mixture until just combined. Do not overmix.

  5. Spoon or pipe batter into donut pan, filling ¾ full.

  6. Bake 15-18 minutes or until donuts spring back lightly when touched and a toothpick comes out clean.

  7. Cool in pan for 5 minutes, then invert onto rack with pineapple side up. Serve warm.
