Cheesy Pepper And Onion Hashbrowns
  1. In a large nonstick skillet, heat olive oil over medium heat.

  2. Add onions and peppers and saute about 5 minutes, or until soft.

  3. Season with salt and pepper.

  4. Add half a bag of shredded potatoes into skillet and let cook for 6-7 minutes with the peppers and onions.

  5. After 6-7 minutes gently flip (you can do this in sections) so that other side cooks as well.

  6. Cook for another 6-7 minutes.

  7. Add cheese and let melt.

  8. Serve with hot sauce and eggs.
