In a large nonstick skillet, heat olive oil over medium heat.
Add onions and peppers and saute about 5 minutes, or until soft.
Season with salt and pepper.
Add half a bag of shredded potatoes into skillet and let cook for 6-7 minutes with the peppers and onions.
After 6-7 minutes gently flip (you can do this in sections) so that other side cooks as well.
Cook for another 6-7 minutes.
Add cheese and let melt.
Serve with hot sauce and eggs.
