Cook ½ lb pasta in salted water until al dente. Reserve ½ cup pasta water before straining.
Add 3 tbsp of butter and a dash of olive oil to a pan on medium heat.
Add 3 cloves of minced garlic and cook until fragrant.
Add 3 tbsp of tomato paste & mix. Cook until it turns a dark red then add 1 cup of your favorite tomato sauce.
Once simmering, add ¾ cup of heavy cream. Mix and bring to a simmer.
Season with salt, pepper, onion/ garlic powder.
Add ½ cup cheddar, ½ cup mozzarella and ½ cup parmesan with a handful of fresh basil.
Mix then add your cooked pasta and a dash of pasta water.
Let it all cook together for a few mins then top with more parm and fresh basil! Enjoy :)
