Lemon Cottage Cheese Scones
  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and lemon zest.

  3. In another bowl, combine cottage cheese, egg, and honey or maple syrup. Stir until mostly smooth.

  4. Add wet ingredients to the dry ingredients. Gently fold until a sticky dough forms. Pat dough into a circle about 1 inch (2.5 cm) thick and cut into wedges or rounds.

  5. Place scones on the prepared baking sheet. Bake for 18–22 minutes until lightly golden and firm to the touch.

  6. If using glaze, mix powdered sugar with lemon juice and drizzle over cooled scones.
