Chicken Stroganoff
  1. Slice the chicken breasts into bite sized chunks and season lightly with salt, pepper, and smoked paprika.

  2. Heat the oil in a large pan over medium/high heat. Add the chicken and cook for 4-5 minutes until golden brown. Remove and set aside.

  3. In the same pan, add the onion and cook for 3-4 minutes until softened. Add the garlic and chestnut mushrooms and cook for another 3-4 minutes.

  4. Stir in the Dijon mustard, Worcestershire sauce, mixed herbs, and remaining smoked paprika.

  5. Pour in the chicken stock and bring to a gentle simmer. Return the chicken to the pan and cook for 8-10 minutes, stirring occasionally, until the chicken is cooked through and the sauce has slightly reduced.

  6. Reduce the heat to low, then stir in the Philadelphia soft cheese until the sauce becomes smooth and creamy. Season to taste with salt and pepper.

  7. Sprinkle with chopped parsley and a little extra paprika for a bit of colour. Serve over fluffy rice and enjoy.
