Vegan Pâté
  1. Preheat your oven to 350°F (175°C).

  2. Prepare the bread by cutting it into slices or cubes and placing it in a bowl. Pour the almond milk over the bread and let it soak while you cook the mushrooms.

  3. In a skillet, heat the oil and add the onions. Cook them until they are caramelized and nicely browned to enhance the flavor.

  4. Once the onions are caramelized, add the minced garlic and chopped mushrooms to the skillet. Sauté for about 3-5 minutes.

  5. Deglaze the pan with soy sauce and season with ground black pepper. If using, add the cognac and cook for an additional 2-3 minutes to let the alcohol evaporate. Remove from heat and set aside.

  6. In a high-speed blender, add the cashews and blend until they reach a flour-like consistency, leaving some larger pieces for texture.

  7. Transfer the sautéed mushroom mixture to the blender along with the soaked bread, melted vegan butter, cacao powder, sugar, rosemary, thyme, nutmeg, and salt.

  8. Blend the mixture, scraping down the sides as needed, until you achieve a slightly chunky texture. Blend longer if you prefer a smoother pâté.

  9. Transfer the pâté mixture into two 7-ounce jars or one larger jar, leaving about ¼ empty to allow for rising during baking.

  10. Bake the jars in the preheated oven for approximately 20 minutes.

  11. After baking, let the jars cool completely at room temperature before placing them in the refrigerator.

  12. Enjoy the pâté chilled! It pairs well with toasted bread, bagels, or sandwiches. The pâté can be stored in the refrigerator for up to 7 days.
