Chop 200g of mushrooms and fry in a pan
Season with pepper, salt and fresh parsley
Set the mushrooms aside
Add 50g of butter, 1 onion and 2 chopped garlic cloves to the pan
Add 1 cup arborio rice to the pan and saute for a while
Add 500ml of chicken broth at first and mix
When the rice starts to thicken, add more chicken stock & water and mix. (it is important to stir the rice all the time!)
Finally add the mushrooms
Add butter and a lot of Parmesan cheese
