Place oil, vanilla, brown sugar, and white sugar into bowl and whisk to combine.
Add 4 eggs and whisk again.
Add flour, salt, baking soda, and cinnamon. Gently fold into wet ingredients with spatula.
Mix in carrots, raisins, and pecans (if using)
Spray 2 springform cake pan with cooking spray and line with parchment paper. Add half the batter to each cake pan.
Beat cream cheese until smooth, then slowly add in icing sugar while continuing to beat.
Add cream to the mixture while mixing.
Oven 175°C/350°F for 45 minutes
Remove from oven and let cool.
After cooled, lay down one cake and spread with cream cheese icing. Place second cake on top and spread with more cream cheese icing.
