An Autumn Burger
  1. Lightly mix together the ground meat, salt, pepper, allspice and thyme. Cover and set in the fridge to marry the flavors.

  2. On medium low heat, sauté the onions in the Tablespoon of olive oil along with a two-finger pinch of salt for about 15 minutes.

  3. Peel, quarter and slice the apple.

  4. Add the sliced apples to the onions and sauté another 5 minutes, then remove from heat.

  5. Form the patties and grill for 4 minutes on the first side, then flip and grill for another 2 minutes.

  6. Top the burgers with slices of Brie and grill for another 1-2 minutes until the Brie is soft.

  7. Briefly toast/warm the buns.

  8. Warm up the onions/apple mixture again.

  9. Drizzle olive oil and balsamic vinegar onto the arugula, add a pinch of salt and toss gently. Mound on the bottom bun halves.

  10. Nestle the burger patties onto the arugula and top with the caramelized onion and apple.
