Blitz the ginger, garlic, and green chilies together, or crush them using a pestle and mortar.
Combine the mixture with the dried spices, salt, gram flour, and self-raising flour.
Slit the okra lengthwise into quarters to create thin strips. Toss the okra with the flour mixture and leave to rest for 30 minutes.
Air-fry in batches on high for 12–15 minutes, or until crisp.
Serve immediately
