In a pan add the tin red peas alongside the scallion, thyme, pepper, garlic, and the coconut milk and green seasoning (epis), the magi seasoning and the all Purpose seasoning; adjust with salt to your liking add 1cup of water or enough based on the amount of rice you're using.
Bring the mixture to a boil to release the aromatics of each ingredients then add rice and boil on High for 2 minutes.
Turn heat to Low, and cook covered until all water is absorbed covered with foil (about 15 to 30 min).
Fluff with fork before serving.
