Beef And Sweet Potato Stew
  1. Spray a large dutch oven or saucepan over a medium-high heat with cooking oil spray.

  2. Add the beef in two batches, season with salt and black pepper and cook till lightly browned.

  3. Set aside.

  4. Add onion, carrots, celery and garlic and a little of the stock to deglaze the pan and fry for a few mins till softened.

  5. Add all other ingredients

  6. Bring to a boil, then reduce heat cover and simmer for approx 1.5 hours (the longer the better)

  7. Mix the cornstarch with a little cold water to make a paste and stir it into the stew until thickened.

  8. Sprinkle with some fresh parsley.

  9. Serve and enjoy

  10. Set the instant pot to saute mode and spray the inner pot with cooking oil spray.

  11. Once the instant pot displays hot.

  12. Add the beef in two batches, season with salt and black pepper and cook till lightly browned.

  13. Set aside.

  14. Add the onion, carrots, celery and garlic and a little of the stock to deglaze the pan and fry for a few mins till softened.

  15. Add back in the beef and all other ingredients. (apart from cornstarch)

  16. Add lid, set to manual high pressure for 30 minutes

  17. Once finished cooking allow pressure to release naturally

  18. Set to saute mode

  19. Mix the cornstarch with a little cold water to make a paste and stir it into the stew until thickened.

  20. Sprinkle with some fresh parsley.

  21. Serve and enjoy

  22. Spray a large frying pan over a medium high heat with olive oil spray and brown beef in two batch seasoned well with salt and black pepper and transfer to slow cooker

  23. Add the onion, carrots, celery and garlic and a little of the stock to deglaze the pan and fry for a few mins just to light brown. (you can skip these two steps if you prefer, but stew has a better flavour profile if you brown the meat and base)

  24. Transfer to the slow cooker along with all other ingredients, apart from the cornstarch.

  25. Cook on low for 7-8 hours

  26. In a small bowl whisk together cornstarch with approx 2 tablespoons of water so that it is a slurry. Stir this into the stew in the slow cooker, cover and cook on high for an additional 30 minutes.

  27. Stir in the fresh parsley

  28. Serve and Enjoy
