Blitz your biscuits to a crumb, I hold back 5 to break into larger pieces.
Cut mallows into 4 bits, cut cherries in half, and cut ginger (if using) into small pieces.
Get it all into a bowl with your can of condensed milk. Give it a good thorough mix!
Tip a good amount of coconut onto a sheet of baking paper and tip the mixture onto it. I use a food safe glove, it's really sticky!
Scatter more coconut over the top, then gently use your hands and the paper to push together into a log shape.
Transfer to some plastic wrap, roll up and using the ends roll it on your worktop, this will firm it up.
Then into the fridge overnight. I store mine on its side in a cylindrical canister to stop it going flat on the bottom!
Next day, simply unwrap it and slice with a sharp knife.
