Meatloaf Cupcakes with Whipped Potato Frosting
Ingredients:
1 lb ground beef
½ cup breadcrumbs
¼ cup milk
¼ cup grated Parmesan cheese
¼ cup finely chopped onion
1 clove garlic, minced
1 large egg
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
Salt and pepper to taste
Whipped Potato Frosting:
3 medium potatoes, peeled and diced
¼ cup milk or heavy cream
2 tablespoons butter
Salt and pepper to taste
Optional: Chopped chives or parsley for garnish
Directions:
Preheat the Oven:
Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line it with cupcake liners.
Prepare the Meatloaf Mixture:
In a large bowl, combine ground beef, breadcrumbs, milk, Parmesan cheese, chopped onion, minced garlic, egg, ketchup, Worcestershire sauce, salt, and pepper. Mix until well combined.
Form the Meatloaf Cupcakes:
Divide the meat mixture evenly among the muffin cups, pressing it down gently into each cup to form individual "cupcakes."
Bake the Meatloaf Cupcakes:
Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the meat is fully cooked and reaches an internal temperature of 160°F (71°C).
Prepare the Whipped Potato Frosting:
While the meatloaf cupcakes are baking, bring a pot of water to a boil. Add diced potatoes and cook until tender, about 10-15 minutes. Drain and transfer the potatoes to a bowl.
Add milk (or heavy cream), butter, salt, and pepper to the potatoes. Mash until smooth and creamy. Adjust seasoning to taste.
Frost the Meatloaf Cupcakes:
Once the meatloaf cupcakes are done, let them cool for a few minutes, then carefully remove them from the muffin tin.
Use a piping bag or spoon to top each meatloaf cupcake with a generous swirl of whipped potato frosting.
