No-bake Homemade Crunch Bars
  1. Line the Pan: Start by lining an 8×8-inch baking pan with parchment paper. This will prevent the bars from sticking and make it easier to lift them out once set. Leave some overhang on the sides for easy removal later.

  2. Combine Wet Ingredients: In a large mixing bowl, combine the almond butter, melted coconut oil, cocoa powder, erythritol, vanilla extract, and salt. Stir until the mixture is smooth and fully combined. The texture should be creamy and slightly thick.

  3. Incorporate Crunchy Elements: To the wet mixture, add the unsweetened puffed rice cereal, chopped nuts, and shredded coconut (if using). Gently fold these ingredients into the mixture using a spatula, ensuring the cereal is evenly coated without crushing it.

  4. Spread Evenly: Pour the mixture into the prepared baking pan. Use the spatula to spread it out evenly and press it down firmly to ensure it holds together once set. Smooth the top for a nice finish.

  5. Chill the Mixture: Place the baking pan in the refrigerator and let it chill for at least 30 minutes. This will help the bars firm up and make them easier to cut.

  6. Melt the Chocolate: While the base is chilling, melt the sugar-free chocolate chips with 1 tablespoon of coconut oil. You can do this in a microwave-safe bowl, microwaving in 30-second intervals and stirring in between, or use a double boiler over low heat.
