One Pot Lasagna

This makes about 4 servings:

For the white sauce:

  1. First add the ingredients for the white sauce into a blender and mix until creamy

  2. Cook the zucchini for about 5 minutes (if you don’t have IBS, you could cook a chopped onion at this point too), add the ground beef and when it’s almost cooked add the green onions (or garlic if you don’t have IBS), season with salt, pepper, oregano, basil and chili flakes

  3. Add the crushed tomatoes, tomato paste and stock and stir. Break the lasagna noodles into the pan and make sure they are covered in the liquid. Cover with a lid and let simmer for 20-25 minutes. Make sure that the noodles are cooked

  4. Add the white sauce and parmesan on top, cover with the lid until the cheese melt

  5. Serve with fresh basil and enjoy!
