Add potatoes to boiling water and boil for 10-12 mins until tender. Then drain.
Meanwhile, add the butter to a preheated frying pan, melt.
Add the grated carrot to the pan and gently cook with the butter.
Mash the drained potatoes.
Add the buttered carrot, mozzarella, chorizo and seasoning to the mashed potato and mix in with a fork.
Form small dumplings and press to create circles.
Apply spray oil to air fryer and add as many bites as you can. Air fry for 6 minutes each side.
Remove, allow to cool for 3-5 mins and enjoy!
