Lindsey’s Bolognese
  1. Add olive oil to pan along and heat on medium

  2. Add shallots, garlic and tomatoes and sauté for 5 minutes or so

  3. Take sautéed vegetables out of the pan while leaving the oil; add ground beef and sausage and brown

  4. Pour off approx 90% of oil in the pan, reduce heat to low and add sautéed veggies and tomato paste to the pan

  5. Cook rawness out of tomato paste for about 5 minutes

  6. Add vodka and cook off alcohol

  7. Add heavy cream, stir and cook on low for a few minutes

  8. Add salt and pepper to taste

  9. Add ¼ to ½ cup pasta water to the sauce and heat through

  10. Mix in al dente pasta and serve
