Heat 4 tbsp Olive or other oil in a pan that has a tight fitting lid.
Once hot, add cumin and mustard seed and a dry chili or flakes if you like a bit of heat.
Wait until the seeds pop and splutter, change colour and turn fragrant.
Add chicken and turmeric.
Add 1 mug of unwashed (if it's a good clean reputable brand which they generally are) white basmati rice and double the water so two mugs.
You can use stock instead of water for extra chicken oomph, and add salt.
Add any optional ingredients like dry plums or peas.
Get to panic point, lid on, heat off and in 15-20 min it's done and will sit obediently waiting for you until you're ready to eat.
