Preheat your oven to 350 degrees F (175 degrees C) and lightly grease a 9x13-inch baking dish.
In a large bowl, mix together the cake mix, water, 3 eggs, and vegetable oil using an electric mixer until everything is well combined, which should take about 2 minutes.
Pour the batter into the prepared baking dish and set it aside.
For the ricotta cheese layer, in a separate bowl, combine the ricotta cheese, sugar, vanilla extract, and the remaining 4 eggs, then blend until smooth.
Spread the ricotta mixture evenly over the top of the cake batter.
Place the dish in the preheated oven and bake until a toothpick inserted in the center comes out clean; this will take about 1 hour and 15 minutes for a glass baking dish, or 1 ½ hours for a metal pan.
Once baked, allow the cake to cool completely before adding the topping.
To prepare the topping, mix the pudding mix with milk until it thickens, then fold in the thawed whipped topping.
Spread the topping over the cooled cake.
