Wash and grate zucchini. Remove ends.
In a bowl, mix zucchini, eggs, grated cheese, and salt until smooth.
Spread onto a parchment-lined baking tray and bake at 180°C (350°F) for 25 mins.
Flip the cooked base, layer it with mozzarella + ham, and roll it up tightly.
Return to the oven for 10 more minutes until golden and melty.
