Line a loaf tin with baking paper
Add the coconut, raspberries, vanilla and maple syrup to a food processor and pulse for a few seconds until it starts to come together
Press into the loaf tin and place in the freezer until solid (1-2 hours) - slice into bars and place back in the freezer while you melt the chocolate
Coat each bar in chocolate (use 2 forks to do this!) place back in the freezer to set
