Upside Down Puff Pastry Onion Tart
  1. Pre-heat the oven to 170C (fan) and line 2 baking trays with parchment paper.

  2. Roll out the puff pastry and divide into 8 even rectangles.

  3. Drizzle olive oil and balsamic vinegar on the baking trays, sprinkle with salt, pepper, and thyme.

  4. Arrange the shallots on the seasoned mixture.

  5. Spread cream cheese on each pastry rectangle, then place on top of the shallots.

  6. Seal the edges with a fork.

  7. Brush with egg wash and bake for 25 mins or until golden.

  8. Allow to cool for 5 mins and then flip the tarts over.
