Take your tofu and chop that into tiny little cubes, then deseed the pepper and chop that into tiny little cubes just like the tofu.
Pop it on a lined baking tray (if you’re using an oven). Add the paprika, oil, salt and pepper and mix them all together.
Cook those for 20 minutes in a 200°C oven. Or for your air fryer, mix the paprika, oil salt and pepper in a bowl, then add directly into the air-fryer basket and cook for 13 mins at 200°C.
In a food processor, add our silken tofu, harissa, lemon juice (or ACV) and nutritional yeast, and blitz until it looks like a harissa mayo. Season to taste.
Prep the bits you would like in your sandwich, and slice your pittas open.
Once the tofu and peppers are roasted, add them and the harissa sauce into a large mixing bowl and mix them all together.
Stuff your pittas with the harissa tofu and toppings, serve 3 of them, and wrap up the ones you don’t want to eat now.
