Tofu Parmesan Sandwiches
  1. Prepare the tofu for frying by draining the tofu, and placing it on a clean kitchen towel on top of a plate or other flat surface. Wrap the towel over the tofu, and place another place on top. Place a heavy object, such as cans or a book, over the top plate, and let sit for 30 minutes.

  2. Beat together the eggs in a shallow bowl.

  3. In another shallow bowl, add panko breadcrumbs, oregano, salt, and garlic powder.

  4. Preheat oven to 350F.

  5. Cut tofu lengthwise into 4 slices. Heat olive oil in a large skillet over medium heat.

  6. Bread the tofu by first dipping each slice in the egg wash, then in the breadcrumb mixture until the tofu is evenly coated.

  7. Fry the tofu in the skillet until golden brown, about 3-4 minutes per side. Remove from pan.

  8. Assemble the sandwiches by spreading a layer of marinara on the bottom half of a roll, then add a slice of fried tofu, then another layer or marinara, then a layer of mozzarella slices, then a generous sprinkle of Parmesan. Top with the top half of the roll, and place on a sheet pan. Repeat for remaining sandwiches.

  9. Bake sandwiches at 350F for 10 minutes, or until roll is slightly crispy and cheese is melted. Serve immediately.
