INGREDIENTS 2 lbs salmon fillets (cut into 4 inch pieces)
For the salmon rub: ½ teaspoon salt 1 teaspoon garlic powder 1 teaspoon black pepper 2 teaspoon sesame oil
For the sauce: ⅓ cup sugar 2 tablespoon less sodium soy sauce 2 tablespoon oyster sauce ½ cup water 1 tablespoon chicken powder 3 teaspoon vegetable oil 2 teaspoon minced garlic 2 teaspoon minced shallot a small knob of ginger
Toppings: thinly sliced green onion and fried shallots Instructions:
Wash thoroughly and clean the salmon fillets under salted water. Pat dry with paper towel
Rub the salmon fillets with garlic powder, salt, black pepper, sesame oil. Set aside to marinate for at least 15 minutes
Preheat oven at 400 degrees F. Grease baking dish with vegetable oil or spray it with cooking spray
Place salmon fillets in prepared baking dish. If the top of the salmon seem dry, sprinkle a little more sesame oil
Bake in the oven for about 7 to 10 minutes, until top is just cooked.
While salmon is baking, prepare sauce. In a bowl, combine sugar, soy sauce, oyster sauce, water and chicken powder and whisk until all ingredients are well combined. Heat oil in a medium skillet over medium heat. Stir in minced garlic, ginger, shallots and cook until golden brown. Let boil, then simmer until sauce thickens. Season again according to taste. Pour sauce over salmon and bake for an additional 5 minutes.Remove from oven. Top off with fried shallots and sliced green onion.
