  1. In a mixing bowl, combine the sourdough discard, all-purpose flour, salt, and baking powder. Mix until a dough forms.

  2. Knead the dough on a lightly floured surface for 2-3 minutes until smooth and elastic. If the dough is too sticky, add a little more flour.

  3. Shape the dough into a ball and place it back in the mixing bowl. Cover with a clean kitchen towel and let it rest at room temperature for 30 minutes.

  4. Preheat your oven to 450°F (230°C). If you have a pizza stone, place it in the oven to preheat as well.

  5. After the dough has rested, transfer it to a lightly floured surface. Use a rolling pin to roll out the dough into a circle or rectangle, about ¼ inch thick.

  6. Transfer the rolled-out dough to a parchment-lined baking sheet or a pizza peel if using a pizza stone.

  7. Spread the pizza sauce or marinara sauce evenly over the dough, leaving a small border around the edges.

  8. Sprinkle the shredded mozzarella cheese evenly over the sauce.

  9. Arrange your choice of toppings over the cheese.

  10. Carefully transfer the assembled pizza to the preheated oven. If using a baking sheet, place it directly on the oven rack. If using a pizza stone, slide the pizza onto the hot stone in the oven.

  11. Bake for 12-15 minutes, or until the crust is golden brown and the cheese is bubbly and melted.

  12. Remove the pizza from the oven and let it cool for a few minutes before slicing.

  13. Slice the sourdough discard pizza into wedges or squares and serve hot.
