Add apples, sugar, Smoky Maple Seasoning, and apple juice to a large stockpot.
Cook over low/medium heat for 15 minutes until apples are tender.
Mix cornstarch and water to create a slurry; stir into the apple mixture.
Cook until thickened, like apple pie filling.
Preheat the oven to 450°F. Brush a 9” cast iron skillet or 7x10 baking dish with 1 tbsp butter.
Mix all dry ingredients in a large bowl.
Cut in the cold butter until the mixture resembles pea-sized crumbs.
Stir in buttermilk, mixing until just combined. Avoid overmixing.
Freeze dough for 20 minutes.
Use a large ice cream scoop to portion dough into 6 large biscuits in the prepared baking dish.
Top with apple pie sauce and bake for 20 minutes.
Mix milk, maple syrup, and powdered sugar until smooth.
Drizzle over baked biscuits.
