In a large bowl, mix together the paneer, potatoes, onion, cumin seeds, chilli powder, turmeric powder, chaat masala, herbs, salt to taste with 2 tsps of oil.
Then mix well and lather over your puff pastry sheet.
Roll tightly to create a giant pinwheel and then cut into smaller slices.
Brush with milk/ egg wash and air fry at 180C for 20 minutes. Ensure to turn them over during the halfway point.
