Finely chop the garlic and Thai chillies.
Heat a generous drizzle of vegetable oil in a pan over high heat. Add the chopped garlic and chillies and stir-fry for about 30 seconds until fragrant.
Add the pork mince and break it apart with your spatula. Stir-fry over high heat until cooked through and nicely browned.
Add the oyster sauce, fish sauce, dark soy sauce, sugar and a little Yum Yum or MSG. Toss everything together until the pork is well coated and the sauce has cooked into the meat.
Turn off the heat, add a handful of Thai basil and toss until just wilted.
Serve over hot jasmine rice and top with a crispy fried egg.
