In a pot over medium-low heat, combine the coconut sugar and stir until it becomes sticky.
Pour in the water and raise the heat to bring the mixture to a simmer.
Add the cinnamon sticks, lemon skin, lime skin, and orange skin to the simmering syrup.
Incorporate a dash of coriander and a dash of nutmeg.
Let the mixture simmer for 5 to 10 minutes until it thickens and the flavors blend together.
Remove the pot from the heat and strain the syrup into a glass jar, discarding the peels and spices.
Mix in the vanilla and bitters.
Allow the syrup to cool for about 30 minutes.
To serve, mix 1 part syrup with 3 parts sparkling water over ice.
