In a large bowl, add softened butter, brown sugar, vanilla, oat flour, and salt. Use a hand mixer on low speed and gradually turn the speed up to medium. Beat until everything is well combined.
Pour 1 ½ Tablespoons mini chocolate chips into the dough, and use a rubber spatula to gently fold them in.
Use your hands to roll them into bite-size balls, place them on a cookie sheet lined with parchment paper, and place into the freezer for 20 minutes.
After about 18 minutes, begin to melt your chocolate. In a microwave-safe bowl, or small pot melt ⅔ cup chocolate chips with 1-2 teaspoons of coconut oil to thin. (Add more coconut oil if needed, you want the chocolate to be smooth and completely melted.)
Take the cookie dough balls out of the freezer and use a spoon to coat them in the melted chocolate, and place back onto the cookie sheet.
Once they're all coated, place them back into the freezer for 10-15 minutes.
